Pineapple Upside-Down Cake



I hadn't made one of these for a long time. I'm glad I did. It didn't go far, with five people. This is one of those things that takes way more time, money and effort to make than time to eat it. And it's not diet food. But it certainly is beautiful, for just a few minutes.

ooooooh are those pecans?? yum! We don't ever slice and serve our PUC, it's served on it's plate with forks standing at the ready :) As an obsessive "equal-flavor-distribution" gal ;) I dig the crushed pineapple option :::vbg:::

That does look beautiful and delicious! I can see why it would disappear quickly. One of the more interesting wedding cakes my DH made in his career as a pastry chef was a three-tiered pineapple upside down cake. I wonde if they had any leftovers? ;D

I broke up the pecans, used an extra egg and put some of the pineapple juice (not much) in the batter because it seemed too thick.

Then I threw the printout in the start-fires-with-this-paper bag.

The next day Holly's boyfriend asked if there was any more. There wasn't. He said he hoped I would make that again someday, and he would love me forever.

He and Marty were downstairs playing video games, so I pulled the recipe back out, and with the other half of a can of pineapple (I had put them in a plastic container in the fridge), Holly quickly helped me make it again, same deal. Same success. Same gone-in-notime.
